Mexican Rice and Fried Bean Burritos

These vegetarian burritos are so delicious! They are bursting with flavor, with Swiss chard, cheddar and basmati rice.

Ingredients

For the rice

  • 1 can 28 oz / 796 ml tomatoes without added salt
  • 1 1/3 cup of water
  • shallot (or 1/2 onion)
  • garlic cloves
  • 1 1/2 tsp. Tea salt or only half if tomatoes have salt added
  • 1 1/2 cups rinsed and drained basmati rice

For vegetables

  • 3 c. tablespoons olive oil
  • 1 bunch of chard stems and leaves separated and coarsely chopped
  • red bell pepper, diced
  • 1 bunch of coarsely chopped baby spinach
  • salt and pepper
